Christina's Flax Seed Muffins
 
Ingredients:
2 Tbsp. flax seeds (before ground)
2 Tbsp. honey
1 egg
Three chopped prunes (optional)
1/2 cup chopped pecans or walnuts (optional)
1/2 banana (or 1/2 cup berries)
2 Tbsp. olive oil
1 tsp. baking powder
1 tsp. soda
1/4 tsp. nutmeg (optional)
1/4 tsp. ginger
1/4 tsp. cinnamon (optional)
Dash of salt
 
Directions:
Grind flax seeds and put in bowl. Mix in other ingredients. Put in six cupcake papers and bake 15 minutes at 350 degrees. (For a change you can make cookies out of these by dropping them by teaspoonfuls on an ungreased cookie sheet. You can also add chocolate chips to the cookies for a tasty treat.)
